Have you ever tried kale? I remember the first time I ran into it at a Whole Foods Market salad bar about 5 years ago. At the time, Whole Foods was rating their salad bar items on some kind of nutritional powerhouse scale, and kale was at the top of the charts. So of couse I added some to my salad. I mean, if you’re eating lunch at Whole Foods, why not just go all the way, right? I found the raw, undressed kale to be a little bit on the strong side – a little extra chewy, and extra flavored than I was used to in my greens. But in a GOOD way!
Since that first encounter, I have found lots of yummy ways to incorporate kale into our regular menu. I am always sure to add a handful of kale to our fruit smoothies. I chop it up and add it into our dinner time frittatta, or baked macaroni and cheese. I love drizzling with olive oil and salt and baking it into crispy, melt-in-your mouth kale chips. We almost always have a bag of pre-washed and chopped kale in our fridge, and I add it into whatever I can.
