Crazy for Kale by Hallie Klecker – A Green Idea Book Reivew

Kale is a green leafy veggie that comes from the same family as broccoli, cauliflower, and brussels sprouts.  Known as one of the world’s most healthy foods, it has a ton (scientific term!) of Vitamin K, A, and C, as well as cholesterol balancing abilities.  The new book Crazy for Kale by Hallie Klecker is your resource for tons of yummy, easy ways to enjoy kale every day!

My Experience

Have you ever tried kale?  I remember the first time I ran into it at a Whole Foods Market salad bar about 5 years ago.  At the time, Whole Foods was rating their salad bar items on some kind of nutritional powerhouse scale, and kale was at the top of the charts.  So of couse I added some to my salad.  I mean, if you’re eating lunch at Whole Foods, why not just go all the way, right?  I found the raw, undressed kale to be a little bit on the strong side – a little extra chewy, and extra flavored than I was used to in my greens.  But in a GOOD way!

Since that first encounter, I have found lots of yummy ways to incorporate kale into our regular menu.  I am always sure to add a handful of kale to our fruit smoothies.  I chop it up and add it into our dinner time frittatta, or baked macaroni and cheese.  I love drizzling with olive oil and salt and baking it into crispy, melt-in-your mouth kale chips.  We almost always have a bag of pre-washed and chopped kale in our fridge, and I add it into whatever I can.

Crazy For Kale

  2. I love kale! I don’t think I had ever eaten it before I started subscribing to a CSA farm, which gives us a lot of kale. Here are my many ways to use kale. One important thing to know about kale is that it is low in oxalic acid, which inhibits your mineral absorption, while spinach is high in oxalic acid. Since kale is usually cheaper than spinach, I consider this a big win!
